Salmon Pecan Patties

14.75 ounce of salmon or 1 ½ cups cooked salmon pieces, firmly compressed
1 tea-spoon olive or canola oil
1 not big onion, chopped
2/3 cup cracker crumbs (you may use everything you like -- wheat crackers, or even rosemary garlic crackers -- to a small food processor and pulse until proper crumbs form)
1 large egg, beaten
2 table-spoons egg substitute
3 table-spoons chopped fresh parsley (or 1 1/2 tablespoon parsley flakes)
1 tea-spoon ground mustard
1/4 cup toasted pecan pieces (toast by heating in frying pan over moderate heat until lightly brown -- about 2 minutes)
2 tea-spoons olive or canola oil

- Salmon, picking out all pieces of bones or skin. Add salmon to a large mixing bowl.
- Put 1 tea-spoon of oil to a frying pan and heat over moderate-high heat. Add onion and cook, stir often, until tender and golden.
- Add onions to the salmon in mixing bowl, at the same time with 1/3 cup of the cracker crumbs, beaten egg, egg substitute, parsley, and mustard and mix on low speed to blend. Put there pecan pieces and beat in brief on low speed until mixed in.
-  Make 6 patties from this mixture. Press both sides of each patty into the remaining cracker crumbs to gently coat.
- Begin to heat a frying pan over moderate heat. Add 2 tea-spoons of oil. Cook the patties until nicely browned on both sides.

Result: 3 portions
This dish includes 369 calories, 26 g protein, 25 g carbohydrate, 18 g fat, 120 mg cholesterol, 274 mg sodium. Calories from fat: 44%.

Taste of Fall
Ingredients:
healthy_cocktail1 cup diced dried apricots
½ cup dried cherries or cranberries
½ cup unsalted or lightly salted roasted almonds or sunflower seeds
1 ½ cup unsalted or lightly salted roasted peanuts
½ tea-spoon pumpkin pie spice
1/3 cup white chocolate chips (optional)

- Add all these ingredients to a gallon-sized plastic bag and close.
- Shake the bag around to mix up all of the ingredients properly.

Result: 4-5 cups, also you may add white chocolate chips.
Each cup of this cocktail includes 208 calories, 7 g protein, 19 g carbohydrate, 14.5 g fat, 0 mg cholesterol, 3 g fiber, 2 mg sodium. Calories from fat: 56%.
NOTE: white chocolate chips will add 30 calories, 2 grams fat, and 1 gram saturated fat to each portion.

Freeze Tangerine
freeze_tangerineIngredients:
1 cup tangerine or orange segments (you may also use mandarin oranges drained, or from can or jar)
6 to 8 ounces orange-seasoned yogurt (you may use light or regular)
1/3 cup tangerine or orange juice (you should use as fresh as possible)
1 cup crushed ice

- Place tangerine or orange segments in a plastic bag or other receptacle to freeze for at least an hour.
- Put frozen tangerine or orange segments to blender together with the yogurt and orange juice. Blend until smooth. Then add in a cup of battered ice and blend until smooth.
-Pour into a tall glass glasses and serve.

Result: 1 tall glass or two small smoothies.
